Gluten free Avocado Toast


I can't get enough of avocado toast! And from the looks of it, I'm not alone. Everywhere I look avocado toast is on the menu.  It's rarely gluten free but that's OK, its easy enough to make. This craze is not surprising because this stuff is as delicious as it is healthy.


Avocados contain more potassium than bananas are loaded with fiber and heart healthy monounsaturated fatty acids.  Avocados are a staple for most Latin families and it is served on the side with almost every meal. Obviously we have to be careful on how much we consume but when we do have it let's dress it up! Here I used Udi's whole grain toast and topped it with mashed avocado, pickled red onions a little chimichurri sauce, a soft boiled egg and broccoli sprouts.  Did you know that research has shown that broccoli sprouts contain 1000% more nutrients than mature broccoli? nuff said! it's delicious!!


Ingredients:

  • 2 oz avocado
  • 2 boiled eggs
  • 2 slices of toast
  • 1 tbsp Pickled red onions
  • 1 tsp chimichurri sauce or top with cilantro (optional)



Instructions:

Mash avocados in a small bowl, add chimichurri sauce and mix. If you don't have chimichurri sauce just add a little cilantro

Bring a small pot of water to a boil, using a thumb tack pierce the wider part of the egg (prevents cracking)  boil the egg for 6.5 minutes, remove and place the eggs in cold water and peel

Spread mashed avocado on toast, top with pickled red onions, egg and broccoli sprouts. add salt and pepper to eggs
