Sweet Potato Hash with Turkey Kielbasa

I love the sweet and savory flavors in this dish.  Top this with a fried egg and an oozing yolk and you got a whole new level of deliciousness!! This was a really easy and quick dish to make but it looks like a you slaved over the stove to make it, no worries I won't tell!  The key to this dish is to cut the cubes evenly.  I steamed the sweet potatoes in the microwave for 6 minutes then cooked them on a cast iron pan.

Here's what it looks like with the eggs.  This is a really great dish after a hard workout.  It's filling and nutrient dense.  Sweet potatoes are rich in anti-oxidants and are very effective at raising blood levels of vitamin A, C and B6 which supports energy.  A 3.5oz serving provides almost 90% of vitamin A needs.  This is a carb worth eating.

Sweet Potato Hash with Turkey Kielbasa

Ingredients:

  • 1.3 pounds of sweet potatoes diced  (4 cups)
  • 1 tbsp extra virgin olive oil
  • 1 small onion, chopped
  • 1/2 cup chopped green bell pepper
  • 6 oz turkey kielbasa, diced

Instructions:

Dice sweet potatoes into evenly sized cubes and steam them in a covered dish with a little water for 6 minutes then drain

Heat a cast iron pan until hot.  add the 1/2 tbsp of olive oil and saute the onions, green peppers and kielbasa for 6-8 min.  Remove from pan and set aside.

Add the other 1/2 tbsp of oil and add the sweet potatoes in the cast iron pan on medium heat,  do not disturb or turn them till they char a bit, about 5 min.

Add the sauteed onions, peppers and kielbasa, saute another 5 min

Top with a fried egg and some scallions or hot sauce (optional) I did not include the points with the eggs.  If you add the egg you should add an additional 3 Smart points for one fried egg or 2 points for two soft boiled eggs
